Hi, as the title indicates I was wondering what the preferred thickness and type of sheet metal is for this repair. I have a few holes to fix!

0.9mm for most panels and 1.2 for reinforcing is common practice if my memory serves. Old valiant bonnets were the go in the 80s. Now I buy sheets of zinc anneal at steel supplies, we’re about $80 1200x2400 sheet.
