Just curious where to set the engine/transmission height would you just get the carb level, I'm just making a temp cross member till I buy a crs or dellows alloy one.
Holden 6 powerglide trans

Why not use a factory one as a temp though? Glide/trimatic/aussie 4 speed same same.

The carb only sits level because the manifold is twisted or cast to make up for the 11deg? angle of engine/trans assy?

Yes the carb flange is twisted so the carb sits flat when the engine is installed, fail to see your point?

11° seems like a big angle, is that correct?
I thought most engines sat around 3° because that's the recommended operating angle for a universal joint?
