How hard is it to change rear shocks on a torana

It is super easy. The nut that screws on to the top of the shock is accessed through the boot compartment. There may or may not be a rubber plug in the top of the shock tower on top of the rear wheel arch. Remove this and use a socket to remove the nut, washer, and rubber grommet. Then crawl underneath and undo the bolt that goes through the bottom of the shock and pull it out. Having jack stands under the chassis rails will give you more room to move, and give the shock room to compress.

Was there any dealer options, where they fitted air shockys to the rear?

Yes, they were optioned using the name Superlift shock absorbers.
