The UC has a front track about an inch wider than the rear track, which seems to be the way for most holdens.
What effect on handling would there be in increasing the rear track to match the front, and would it be noticeable
In the real world?
I'm talking just a street car at that.

Street car, barely noticable.
On the track could possibly induce a bit of understeer depending how much wider you go.
