I think that how the gaps turned out was just up to luck on the day of manufacturing.
My door gaps are like the top picture but much more noticeably on the passenger side, the drivers side fits better. This is with all original panels to the best of my knowledge.

Well the gap on the top one has been sikaflexed, so the guards have probably been of ect, if your guards are original & the same from side to side, then leave them exactly how they are, as Dave said 70's manufacturing. If that's how it was, that's how you keep it. I would, a restoration is taking something back to how it was, i personally think they look correct being a little bit factory rough around the edges myself. Gary.

My brother had an early build LC 82311, it was body #25B or 29B, can't quite remember which now.

The joint where the top of the guard meets the cowl was lead wiped on both guards and the guards were the originals.

But...………….was there a difference between LC and LJ doors is the question?
Also, Adelaide and Brisbane build?

Should have took a pic before I started but this is mine in the same area with about 3mm of build.

The door is not original to the car.

Yes, there is a difference between LC & LJ doors.

LJ has a cutout in the inner door panel for an ashtray mounted in the door trim, the LC doesn't.

Didnt think lead wiping would work in that area.

Lead has little strength.

There is some flex in the area between the guard and the cowl.

I did some basic custom type stuff in the area back in the day, filling the gap.

It cracked the bog work first drive out.

Even tried hairy bog and it cracked that.

Brazed it. Cracked that too.

Eventually got a MIG and welded it up.

That went well.

But took it off the road soon after and cut the weld back out for another direction in what I was doing
