Will this setup work for ls3 water temp sensor and original lx ss yellow needle dash?

Just wanted to know if you can just use this LS adapter and original torana blue ring temperature sensor
on my lx ss yellow needle dash

and what will happen when removing the original LS3 temperature sensor?
Is there a better way?

Yes that will work, but you've missed the point 

 

You are meant to leave the original LS3 sensor as is & fit your new 1/8 NPT sensor in the rear of the RHS head at the rear, where there is currently a plug fitted.

Also to note, temps of an LS are generally higher than the old 6 and 8’s, so what is normal temp for LS will prob put the guage at, what looks to be over heat.
