Questions about new motor

My engine builder has told me not to use triples on a fresh engine as it is too much fuel and will just glaze the bores up again, he suggested a 350 holley.
The thing is, if you have to start running it in from the word go, how do you go about tuning the it? Obviously its gonna take a bit of idling etc to get it running right, but i dont want to do the wrong thing to it, the same goes with timing, do you just HAVE to get it all right first go?
I know how to run in an engine, what im worried about is just getting it running right as soon as possible so as not to have any bad effect on the engine.
Does anyone have any thoughts?

I wouldn't worry too much....ignition timing and go....as long as it runs and drives.

i might just try leaning out the triples a little if he thinks thered be too much fuel..

If so i would avoid low rpm's. (But not over rev it either)
You need fuel to feed big cams at low rpm to keep them running.

One of my mates in particular broke his engine in circuit racing - it is one of the most potent little engines ever!
The only problem for me will be finding good roads to be able to do this!!

i think that ill just throw it all back together, and off i go, ill give it a bit, load it up, and certainly not baby it. problem was last time that the carbs werent tuned and i think it just idled too much before i got any ks on it. shouldnt be a problem this time though.
